Michael Shimeles 464b267403 docs: rename paper-rs to Sketch ...

Prose says Sketch; commands, paths and environment variables use sketch-rs, and the MCP examples register the server as `sketch` to match the download page. Links to the GitHub repo and the checkout paths keep paper-rs because the repo isn't renamed.
